Craig Barbour, Owner / Chef
A 3rd generation small business owner, Craig originally studied mechanical engineering at University of MD before applying his engineering knowledge to his culinary skills at Johnson & Wales in Charlotte, NC. Craig went on to train at Carmel Country Club then on to train under Chef Bruce Moffet, which led him to starting ROOTS Food Truck in 2011.
When he started his culinary career he received a gift from his parents, a sticker that read, “Love people, cook them tasty food,” and that is what he has been doing ever since. “I am so proud to lead the ROOTS team. We are the most adaptable, resilient, hard working team in the city. When the ROOTS team sees a mountain they immediately want to climb straight over not around it.”
Kellyn Stamey, VP of Sales and Development
Kellyn has been an enthusiastic ambassador of the ROOTS team since 2013. She graduated valedictorian of her class from Johnson & Wales University with a B.S. in Entertainment and Event Management.
When she’s not travelling the world or cage diving with great white sharks in Africa, Kellyn leads our sales team in delivering hundreds of thoughtfully curated events each year.

Kyle McMackin, Executive Chef
Kyle has over 15 years of experience in kitchens, training at the Culinary Institute of Charleston, working at famed restaurants in the Charleston like Carter’s Kitchen and Hominy Grill.
Growing up on a 250 acre cattle farm, where he still lives, in South Carolina, Southern cooking is second nature, but Kyle brings so much knowledge and experience in lots of different types of cooking and is not afraid to take on any culinary challenge that ROOTS’ clients can throw at him.
ROOTS has been lucky to have Kyle as a part of our tight knit team for 4 years now, and is excited to continue being part of, in his words, “the most adaptable, agile, and resilient catering company in the world.”
Chandler Jernigan, Creative Director/Corporate Accounts Executive
A graduate of Johnson & Wales University, Chandler has been in the service industry for over 7 years and wears many hats at ROOTS. Not only does Chandler manage and sell events for ROOTS, she functions as our in-house Creative Director, creating digital and free hand renderings to embody the ROOTS brand, including the current ROOTS logo.
Aside from her many talents, Chandler’s biggest strength is her passion for people. As she says, “We want to know the people on the other end of the phone because we are being invited to help create some of their most cherished memories. Our number one focus at ROOTS is always taking the extra step to ensure that each event exceeds expectations.”
Randi Harris, Chief Financial Officer
Randi has been in the service industry since she started working, both in restaurants and in massage therapy. From there she graduated from Stanly Community College with a degree in Business Administration and Accounting. She is studying to become a Certified Managerial Accountant.
Randi loves working with and analyzing the numbers that keep ROOTS running smoothly and efficiently. As a part of ROOTS Board of Directors Randi assists with making financial decisions for the future of the company.
Randi loves working at ROOTS because, “Roots is a family that is inviting to everyone. We are melting pot of all different backgrounds who come together and work daily to be the best in this industry.”
Nathan Law, Operations Manager
Nathan has been part of the ROOTS family for many years, taking opportunities to work at many of Charlotte’s top hospitality brands, including Carmel Country Club, Sheraton/Le Meridien, Armin’s Catering and successfully opening and managing the Reid’s Fine Foods at Southpark. He even had the honor and privilege of cooking with Top Chef Master, Marcus Samuelsson.
Nathan loves what ROOTs stands for, and says, “I enjoy being a part of growing company; I am excited to be a part of the direction that Roots is heading towards. ROOTS’ employees are genuine and real, we have a passion for what we do and demand the best out of ourselves.”
Savannah Witt, Hospitality Manager
Savannah's passion for food and cooking began at age 14. After studying wine and food pairing in Germany and interning at Walt Disney World, Savannah graduated from Johnson & Wales University in 2016. She studied Culinary Arts and Food Service Management and joined the ROOTS team shortly after.
Savannah worked as a server and event manager for ROOTS throughout college and has dedicated her time to her new position as the Staffing and Events Hospitality Manager. Her main focus is operating staffing efforts and working directly with clients onsite at events. "My drive stems from establishing personal and meaningful experiences through food and service. Food can affect each individual differently, but it is the one thing that can bring people together; that's why I think it is so important."
Olivia EllioTt, Hospitality Manager
Graduating from CPCC with a Hospitality Management degree in 2015, Olivia came to ROOTS from Pine Lake Country Club bringing her high-end service experience and attention to detail with her.
Olivia loves being a part of bringing people’s vision to life, from the first phone call to the many details in between. “I love the details, the people, the food, the celebration, and seeing it all come together. Even in moments of urgency or stress, our team excels at staying positive.”
As an accomplished pianist, Olivia knows the value of dedication and detail, and will apply that to each and every one of her clients.
Courtney Satterfield, Pastry Chef
After learning to bake with her great grandmother, Courtney fell in love with the profession and graduated from Johnson & Wales with a Baking & Pastry degree and a Food and Beverage Entrepreneurship degree.
Courtney loves that, “Roots is a close-knit family. Roots allows everyone to be themselves and have a fun time on those long work days. It’s a place and a team that lets your creativity grow. We go out of our way to make sure our clients and employees are all happy with the services we give them.”
